Third Eyeballs

In case you missed the demo at the Greenbelt Co-op Supermarket & Pharmacy on Oct. 24, it's never too late to enjoy these recipes for third eyeballs, with three variations using hard cooked eggs, mozzarella cheese balls, or fresh radishes.

Cook up a recipe for spaghetti skulls with peppers and your favorite pasta while you're at it.

Healthy Halloween Treats

Version 1

Ingredients:

  • Hard cooked eggs
  • Black olives
  • Jarred red bell peppers or pimentos

Directions:

  1. Prepare eggs as you would “Deviled Eggs.”
  2. Open and drain a can of black olives. Slice in half or thirds if very large.
  3. Use red peppers or pimentos strips to create veins by laying the olive center outward.

Version 2

Ingredients:

  • Mozzarella cheese balls
  • Canned black olives
  • Radish rounds
  • Soft or whipped cream cheese
  • Tomato sauce

Directions:

  1. Drain mozzarella cheese balls well. Trim off end.
  2. Using cream cheese as glue, add radish slice to end of cheese ball followed by more cream cheese and black olive slice.
  3. Serve in shallow bowl on mirror of tomato sauce.

Version 3

Ingredients:

  • Fresh radishes
  • Canned black olives
  • Softened cream cheese

Directions:

  1. Trim radishes to remove tails and cut off the leaf end to reveal a flat surface. Use a peeler or paring knife to remove some of the red skins to create thin strips of red running along sides.
  2. Using some softened cream cheese, glue on the flat end of the radish and stick on an olive ring. Serve on picks.

Note: These recipes can also be floated in a shooter of tomato juice.
